VINEYARD

Ungrafted vines formed in traditional “aplotaria” over 90y.o. from the mountainous area of Thapsana (400m altitude).

WINE MAKING

Maceration and fermentation in stainless steel tank at low temperature with wild yeast. Ageing on its fine lees for 12 months. The wine was bottled unfiltered.

TASTING NOTES

Intense citrus aromas, candied apricots, and peaches with notes of honey and white pepper. Rich body with crisp acidity and exceptionally long aftertaste.

PAIRING SUGGESTIONS

Big fatty fish on the grill, oysters, steamed mussels, white meat.

Best served at 8-10℃
